Baked Maple Pork Loin

This recipe took first place in the 2019 West Virginia State Fair Savory Maple Contest. By Kathy Hughart, Greenbrier County, WV. Baked Maple Pork Loin is borrowed from “Appalachian Maple: Recipes & Stories from the Mountains,” a cookbook published by North Mountain Press for Future Generations University.

Ingredients

  • 1-2 lb pork loin

  • Flour, enough to coat loin

  • 1/4 cup Appalachian maple syrup

  • 1/4 cup ketchup

  • 1/4 tsp garlic powder

Directions

  1. Preheat Oven to 350 degrees.
  2. Heat oil in skillet.
  3. Coat loin in flour, then place in skillet, turning meat to brown on all sides.
  4. Transfer meat from skillet to deep baking dish.
  5. Mix together syrup and ketchup, then pour over loin and sprinkle with garlic powder.
  6. Cover and bake in preheated oven until loin reaches 170 degrees, about 45 minutes to one hour.
